The Vibrant, Spicy Sauce That Elevates Every Meal
I first experienced the vibrant, unforgettable kick of aji verde at Tina’s Cuban in New York City. It was served alongside a classic fried pork sandwich, and that bright green sauce completely transformed the meal. The creamy, spicy blend of cilantro and lime cut through the rich, savory pork perfectly. From that moment on, I was hooked. It quickly became my go-to finishing touch for everything from crispy empanadas to grilled meats, adding a lively accent that elevates whatever it touches.

COOKING TIPS
SIMPLY SIMON SAYS…
Make it extra hot
Aji verde is usually made with green jalapeño peppers, kick it up with green Scotch bonnets or Thai chilis.
Use mayonnaise for extra creaminess.
Adding mayonnaise makes a richer, creamier sauce. Substitute vegan mayonnaise for a completely plant-based sauce.
Not just for sandwiches.
Aji verde is incredibly versatile. Try it drizzled over roasted vegetables, as a marinade for grilled chicken, or as a zesty dip for french fries and empanadas.
