Island Curry, Made Your Way

Island curry chicken is all about building layers of flavor. Aromatic spices, tender chicken thighs, potatoes and carrots come together in a rich, comforting sauce that is perfect with steamed rice or roti.

ALOHA MON! WHAT’S DA CURRY? Island Curry Base makes the preparation simple without sacrificing depth. One portion seasons the chicken while the reserved base is fried in oil until fragrant, developing the spices and eliminating any raw curry flavor. Add coconut milk for a creamier variation, or keep it traditional with water for a deeply savory curry gravy.

Tender chicken thighs, potatoes and carrots simmer in a rich, savory curry made with ALOHA MON! WHAT’S DA CURRY? Island Curry Base. An easy two-serving meal with an optional coconut-milk variation.

Ingredients

  • 1 pound chicken thighs, skin removed, About 2 large bone-in thighs, or boneless thighs cut into large pieces

  • 2½ tablespoons WHAT’S DA CURRY? Island Curry Base, divided

  • 1 tablespoon water, for the marinade

  • 1 tablespoon cooking oil

  • ¾ cup peeled and diced potato, approximately 1 small potato

  • ½ cup peeled and diced carrot, approximately 1 small carrot

  • ½ cup water, plus more as needed

  • Cooked rice or roti, for serving

Directions

  • Marinate the chicken
  • Combine the chicken with 1½ tablespoons Island Curry Base and 1 tablespoon water. Mix until evenly coated. Cover and refrigerate for at least 1 hour or up to overnight.
  • Make the curry
  • Heat 1 tablespoon oil in a medium heavy-bottomed pot or deep skillet over medium heat. Add the remaining 1 tablespoon Island Curry Base. Fry for 30–60 seconds, stirring continuously, until fragrant. Do not allow it to burn.
  • Add the marinated chicken and any marinade remaining in the bowl. Sauté for 4–6 minutes, turning the pieces so they become lightly browned and coated with the fried curry mixture.
  • Add the diced potato, carrot and ½ cup water. Stir well and bring to a vigorous boil.
  • Continue cooking at a steady, active boil, partially covered, until the vegetables are tender and the chicken reaches an internal temperature of 165°F. Allow approximately 20 minutes for boneless thighs or 25–30 minutes for bone-in thighs.
  • Check the pot periodically and add water, 2 tablespoons at a time, whenever the sauce becomes too thick before the chicken and vegetables are tender.
  • Finish & serve
  • When the chicken is cooked and the vegetables are tender, uncover the pot and boil for a few additional minutes, if necessary, until the gravy reaches your preferred consistency. Taste before adding any salt. Serve with rice or roti.

Notes

  • Optional Coconut Curry Variation
Begin with only ¼ cup water in Step 4. When the chicken and vegetables are nearly tender, stir in ½ cup unsweetened coconut milk. Continue cooking uncovered for 5–8 minutes, until the coconut curry gravy is smooth and slightly thickened.

COOKING TIPS

SIMPLY SIMON SAYS…

DON’T SKIP THE CURRY FRY

Fry the reserved curry base in oil for 30–60 seconds, just until fragrant. This deepens the spices and removes any raw curry flavor.

KEEP IT BUBBLING

Maintain an active boil as the curry cooks. If the gravy thickens before the chicken and vegetables are tender, add water 2 tablespoons at a time.

MAKE IT YOUR WAY

For a richer, creamier curry, replace part of the water with coconut milk. Keep the gravy thick enough to coat the chicken and vegetables.
